Healthy Sandwich





Ingredients:

2 slices wholemeal bread

200g salmon fillet

1 tomato

2 lettuce leaves

1/2 low-fat yogurt

1tbsp dill

1 scallion

1/4tsp pepper

1tbsp olive oil

20g cucumber


Equipment:

Method:

  1. Chop dill and scallion.
  2. Slice the tomato and cucumber.
  3. Mix low-fat yogurt, dill, scallion, pepper and put it aside.
  4. Cut the salmon fillet into thin slices brush with olive oil, season and grill for 1 to 2 minutes per side.
  5. Toast the bread and top 1 slice with lettuce, sliced tomato, salmon, cucumber and spread some yogurt mixture.
  6. Place the other toast on top and enjoy!
