Sieve 100g of plain flour into a large mixing bowl. Push the flour to the sides of the bowl to make a well in the centre.

Add the milk a bit at a time whisking as you go

until you have a smooth batter.

Melt a teaspoon of butter in a frying pan.

Remove from the pan to a plate and pop in the

oven to keep warm. Continue making pancakes until all the batter has been used up.

Eat your pancakes with a topping of your choice.

Crack the eggs into the well and whisk together.

Gradually add in the flour from around the sides.

Cook for 1-1 1/2 minutes then carefully turn over the pancake. If you're feeling brave try tossing it in the air to flip it over. Cook for another minute or so.

When it is beginning to sizzle, add 2-3 tablespoons of your batter to the pan. Swirl it around to cover the base of the pan.
