Wholemeal apricot and dark chocolate cookies
Makes 10-12
85g butter
85g unrefined sugar
85g white plain flour
85g wholemeal self-raising flour
1 teaspoon baking powder
1 large tablespoon golden syrup
5 squares dark chocolate

9 dried apricots, cut into small chunks

1. Melt the butter and syrup in a pan
2. Place the flours, sugar, baking powder and apricots into a large mixing bowl and stir gently
3. Add the butter and syrup to the dry ingredints
4. Divide the mixture into balls (about the size of a ping pong ball) and place on a greased baking tray
5. Bake on the middle shelf in the oven at 150oc for 10-12 minutes or until golden brown.
6. Place cookies on a cooling tray, and gently melt the chocolate. you will need a microwave to do this but make sure you check the chocolate doesn't burn.
7. Finally drizzle a little of the chocolate over the cookies. Enjoy!
